High Performance, Excellence and Professional Standard are the three range levels offered by Gi.Metal. The high quality standard is a common denominator of Gi.Metal peels, but some special features make each type of peel different. Basically: tell me which range you choose, and I'll tell you who you are! Ready to start?
The pizza chef who uses his/her tools intensively
Everyone has their own method of preparation and their work needs, which often depend not only on one's own habits, but also on the type of service offered. If your work requires intensive use of pizza peels, you will need a light and smooth tool to avoid fatigue. At the same time, the peel must be very resistant to impact and wear. Hight Performance is the Gi.Metal range for you, thanks to the unmistakable characteristics of the Azzurra, Gluten Free and Napoletana peels.
Azzurra is the most complete line of peels in terms of sizes, and is distinguished by the variety of tools, all characterised by lightness and flexibility. The models all weigh less than conventional peels thanks to their reduced thickness, perforated peel head and anodised aluminium, which not only gives lightness but also protects against oxidation. The grip is also made easier, thanks to the tubular handle and the spatula effect of the peel head, making it handier to work.
The basic characteristics of Azzurra are also featured in the Gluten Free line ... in a green version ! In fact, this type of peel is distinguished by the colour of the handle as a tool dedicated exclusively to the preparation of pizzas with gluten-free flours. Adopting Gluten Free in one's own restaurant means paying great attention to the end customer. It also helps the pizza makers themselves to follow the strict rules on handling ingredients for coeliacs even in the most intense and hectic work situations.
The Napoletana line, on the other hand, is designed for prolonged use in very hot ovens, just like the Neapolitan method. For the same reason, the circular holes in the peel head ensure that the flour is released when working the disc of dough, which, in the Neapolitan style, is done directly on the peel. Finally, the strengthened material and reinforced head make the Napoletana peel very resistant to heat, without compromising on lightness of the handle.
The pizza chef who wants the highest technical level
If you are looking for a peel that combines practicality with the highest technical level, then the Excellence range is for you. It brings together the Evoluzione, Carbon, Gold, Napoli and WoodTech peel lines. Building on the characteristics of Azzurra, these peels further enhance a number of aspects to give you a top-quality result.
Evoluzione, Carbon and Gold, for example, take the perforation to a higher level thanks to the diagonal arrangement of the holes that allows double the flour release. Evoluzione also ensures maximum performance in terms of durability, sliding and heat resistance. Its secret? S.H.A. (Special Hard Anodising): a valuable ally against corrosion, wear and friction.
For a result that combines maximum lightness with an elegant, modern style, you can choose Carbon. At the heart of this iconic black peel is carbon fibre, an ultra-light yet extremely strong material also used in aeronautics, automotive and sports.
The Gold line also stands out, with its golden peels that are super-resistant to heat, scratches and wear. Here, the treatment chosen to give the aluminium superior characteristics is G.H.A., Golden Hard Anodising, which provides low friction, high temperature resistance and gives the tool anti-mould and anti-bacterial performance.
Napoli peel on the other hand, presents itself as the evolution of the Napoletana. Here too, the circular pattern of the holes allows the flour to be released in the Neapolitan style. The peel head is suitable for working in 500°C ovens, and is made even more resistant thanks to S.H.A. special hard anodising. Napoli combines an even more appealing 'Made in Italy' design to technical progress: a handle that recalls the blue Neapolitan sky, and the three rivets in the colours of the Italian flag.
Finally, if you love the colour and look of traditional wooden peels but are looking for lightness and practicality, WoodTech is the answer. It looks like wood, but it’s not! Here, Gi.Metal has combined a look linked to the past with thepracticality, ergonomics, robustness and hygiene provided by anodised aluminium. A tribute to tradition with the intention of modernising it to facilitate the daily work of pizza makers, with an extra touch of class.
The pizza chef looking for a classic peel for everyday use
Finally, if you are fond of traditional classic peels for everyday and continuous use, the Professional Standard range offers the Alice line. Thanks to its very wide angles, its peel head is an effective combination of round and rectangular head. The increased thickness of the handle gives it strength and greater rigidity, making it also suitable for holding large pizzas. Depending on your preference, you can choose the version with a solid peel head or peel head with holes at the top.
From the implementation of innovative technologies to tools that stick to tradition, from attention to aesthetics to the combination of progress and classicism, Gi.Metal peels are ready to meet all your needs!
