For over 30 years, Gi.Metal has been designing and manufacturing tools for those who have made pizza their life and profession. The aim has never been to teach the craft to those who stand at the counter every day, but to listen to pizzaiolos' needs and develop solutions that make work in front of the oven smoother, faster and more satisfying.
If the large peel is the iconic tool for launching pizzas into the oven, the turning and retrieving peel is the essential ally in the most delicate stage: baking. It is the tool used to guide the pizza as it rotates, check how the base is cooking and take it out of the oven perfectly. To help pizzaiolos identify the model best suited to their workflow, here is an overview of the design philosophy behind the Gi.Metal lines, along with some practical tips to get the most out of them.

Design Details: Solutions Born from Listening
At Gi.Metal, every technical detail stems from a real need that emerged during hours of work in front of the oven mouth:
- Stainless Steel and Anodised Aluminium Structure: we select materials that guarantee maximum mechanical strength, lightness and heat insulation along the handle.
- Ergonomic Sliding Grip: the sliding element and the handle end are made of high-density polymer. The new, exclusive locking interlock system lets you instantly and intuitively find the correct grip, even when the tool is stored head-down.
- Perforation: on perforated peels, the chamfered holes reduce friction with the pizza and allow excess flour to fall away before it can burn on the oven floor. This means less smoke in the dining room, a cleaner baking surface and no bitter aftertaste caused by scorching on the base of the pizza.
Our Lines: Different Answers for Every Working Style
There is no single "best" turning peel, but there is a perfect one for the technique and temperatures of each pizzeria.
Azzurra Line – Everyday Reliability
A timeless classic in pizzerias all over the world. The Azzurra line combines high strength with lightness, offering a sturdy, well-balanced tool, ideal for intense working rhythms. Classic perforation: the holes are arranged in the same direction, helping flour fall away during handling.
Evoluzione and Carbon Lines – Lightness and Flour-Release Performance
Designed for professionals looking for the greatest possible reduction in weight and friction effort. The hole layout releases flour in two directions, enhancing the effect.
Napoletana & Napoli Lines – Designed for High Temperatures
Developed to meet the needs of master pizzaiolos working with very high-temperature ovens (Neapolitan style). Calibrated thicknesses and reinforced heat resistance make it possible to work in direct contact with open flames and extreme temperatures while keeping the peel perfectly flat. The circular perforation is designed to follow the movement of the peel while handling the pizza.
Gold Line – Innovation and G.H.A.
Treatment The pinnacle of our technological research. Thanks to the special Golden Hard Anodizing (G.H.A.) treatment, the surface offers antibacterial properties, exceptional corrosion resistance and a very low friction coefficient. The hole layout releases flour in two directions, enhancing the effect.

Tips for Getting the Most out of Your Turning Peel
To ensure the longest life and the best performance from our turning peels, we recommend a few good practices:
- Make the Most of the Sliding Grip: our turning peels are designed for smooth rotations with minimal hand effort: let the middle grip slide without gripping the handle too tightly.
- Effective Flour Removal: on perforated models, a few light taps before taking the pizza out ensure that all flour residue falls straight into the oven, keeping the serving plate clean.
- Metal Care: to preserve the finish and the smooth action of the sliding grip over time, avoid leaving the turning peel in prolonged direct contact with the embers or on the red-hot oven floor when not in use.
